We’ve had an unusually hot summer for being only 10 miles from the coast.  I’ve been loving and needing something cool to drink in the afternoons when I start to wilt.  As usual, the herb garden has given me just what I need – herbal ice teas.  My favorite combos right now: lemon verbena & lavender, hibiscus & rosemary, lemon balm & bee balm, lemon verbena & thyme, mint & rose geranium.  I gather the herbs of the moment and put them in a two quart canning jar, cover in hot water, stir in some honey, & pop them in the fridge to cool.  Such a luscious way to nourish yourself on a hot day.
